Well, in true artist fashion, my wife and I ended up changing our minds: We're going to go with 1920's-esque 1" hexagonal white tiles.

My thanks to everyone who chimed in here and via e-mail! It was fun and educational to read everyone's thoughts — and made a big impact on our decision. Thanks!
